The impact of COVID-19 restrictions will affect some restaurants more than others. Many people will be slow to return to sit-down dining, even after restrictions are lifted. Some chefs may even abandon their restaurants for food trucks or delivery-only operations. Ken Higman is a director of foodservice consulting at JLL.
